A Satisfying Creamy Lemon Dijon Chicken Recipe

Creamy lemon Dijon chicken is simple to whip up, even on the busiest of weeknights. Lemon, Dijon mustard, special sprigs of fresh thyme, and a last minute addition of cream really make this chicken dish delicious!

What Do You Need for this Creamy Lemon Dijon Chicken recipe?

As written, this recipe served my family of two adults and three littles (the baby doesn’t eat yet). We had enough for leftovers the next day for Mama.

You will need:

Iron skillet. Only the best for such a great recipe, right? I’m just kidding, you could use any skillet that you love. (This link is from my Amazon affiliate site…if you choose to purchase through my link I receive a small commission!)

4-5 chicken breasts, medium sized. Chicken tenders would work as well, just add more to fill up your skillet.

Butter and olive oil

Onion- I used half a medium sized one.

Garlic- three crushed garlic cloves

Thyme– I used a handful of fresh thyme sprigs. Don’t you love my specific measurements? If you do not have access to fresh thyme, then 1/2 – 1 tsp of dried thyme will work.

Salt and pepper is the only other extra spices you’ll need!

Water- to let the chicken and spices cook in…we’ll add the rest when the chicken is basically cooked through.

Dijon mustard- I just used the Kroger brand! It doesn’t have to be fancy, just use your favorite.

Lemon juice- I used bottled for this recipe because I was out of fresh. But you could certainly use fresh. Either is fine.

Parmesan cheese- The green can is what I used. You could definitely use the fancier shredded parmesan. I’m sure it would be so yummy.

Heavy whipping cream- this is the grand finale to this recipe, and really makes this sauce amazingly creamy!

How to Make Creamy Lemon Dijon Chicken

First, thaw your chicken breasts if needed. Then, just to tenderize them, I hammered them just a little.

Then, cover both sides with salt and pepper. (I was generous, but didn’t coat them too heavily.)

In the meantime, in your skillet, melt 2 tablespoons of butter and 2 tablespoons of olive oil. I’m not sure why I combine the butter and olive oil? I really think it was from making so many recipes from The Pioneer Woman!

Cook your chopped onion in the oil for a few minutes until they are tender, then add 3 garlic cloves. Let that simmer for a minute more, then add in the chicken breasts.

Let the chicken cook for a few minutes on each side, searing each side if you’d like.

Add in about 1/2 cup of water and the sprigs of thyme.

Cover and let it simmer for 15 minutes.

Once the chicken breasts are pretty much done…

Squirt your Dijon mustard all over the chicken breasts. Again, sorry I don’t have an exact measurement for this…only because I had a nice squirt bottle of mustard! I put a swirl of mustard over each piece of chicken. If you LOVE Dijon like we do, you can squirt some extra in there.

Add 1 tbsp of lemon juice, and stir the chicken around so the mustard and lemon juice make a nice sauce with the cooking liquid that should still be in the skillet.

Sprinkle parmesan over the top of the chicken.

Cook for a few minutes more. I cooked for about 10 more minutes to reduce some of the liquid I had in my skillet. The amount of liquid you have is up to you, you could even add more water if it evaporated already.

After the sauce is reduced to your liking…

Take the finished chicken off the heat.

Swirl in about one tablespoon of heavy whipping cream to the skillet. Stir it around well.

Add more parmesan cheese on the top if you wish!

Now it’s time to serve.

Ingredients
  

  • 4-5 chicken breasts
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 onion chopped
  • 3 cloves garlic minced
  • Salt and pepper
  • Sprigs fresh thyme or 1/2-1 tsp dried thyme
  • 1/2 cup water
  • Dijon mustard
  • 1 tbsp lemon juice fresh or bottled
  • Parmesan cheese
  • 1 tbsp heavy whipping cream

Instructions
 

  • Prepare the chicken by tenderizing with a meat hammer, if desired. Then sprinkle both sides with salt and pepper.
  • Melt butter and olive oil in a skillet over medium heat.
  • Cook the onion until tender.
  • Add minced garlic and cook for a minute more.
  • Put the chicken breasts into the skillet, and cook on both sides for several minutes, searing if desired.
  • Add the water and sprigs of thyme, and cover and let simmer for 15 minutes.
  • When chicken is cooked through, add several squirts of Dijon mustard over the chicken.
  • Add the tablespoon of lemon juice, and stir everything around until a sauce is formed.
  • If you need to, reduce the liquid for a few more minutes.
  • When it is finished cooking, take the skillet off the heat, add in a swirl of heavy whipping cream. At least a tablespoon or more if desired.
  • Stir everything well, and serve!
