Beefy Alfredo
A satisfying casserole with a from scratch alfredo sauce. Your whole family will love it! Makes a 9x13 casserole sized dish.
- 1 lb ground beef
- 1 box Dreamfield's pasta a low carb option.
- 1/4 cup butter cut into small pieces
For the Alfredo sauce:
- 1 lb cottage cheese (16 oz)
- 4 oz cream cheese I use 1/3 less fat
- 1/2 cup heavy cream
- 1/2 cup unsweetened almond milk
- 1/4 tsp glucomannan optional
- 1 tsp mineral salt
- 2 tsp garlic powder
- 1 1/2 tsp Italian seasoning
- 5 tbsp parmesan cheese Green top can
Topping
- Mozzarella and parmesan cheese
Preheat oven to 375 degrees.
Cook the ground beef. Boil the noodles until they are cooked through.
Place the alfredo sauce ingredients in a food processor or blender, and blend until everything is combined.
Place the cut up butter in a 9x13 casserole dish.
Place the cooked beef and noodles on top of the butter in the dish. Add the alfredo sauce.
Top the mixture with a sprinkling of mozzarella and parmesan cheese.
Place the dish in the preheated oven, and cook for 35-45 minutes. Watch to make sure the cheese on top isn't too brown.
