Quinoa Salad

This cool and refreshing side dish is perfect for summer cookouts...or any other time!
Course Side Dish

Ingredients
  

  • 2 cups quinoa cooked and cooled
  • 1 small cucumber
  • 1-2 green onions, chopped small
  • 2 cloves minced fresh garlic
  • 1 tsp extra virgin olive oil
  • 1 tbsp lemon juice bottled or fresh squeezed
  • 1/4 tsp each salt and pepper
  • 1-2 tbsp each fresh parsley, mint, and basil alt: use 1/2-1 tsp dried herbs
  • 1 small tomato, chopped

Instructions
 

  • Add all the ingredients together, give it a stir, and serve!
  • Enjoy!
