Quinoa Salad
This cool and refreshing side dish is perfect for summer cookouts...or any other time!
- 2 cups quinoa cooked and cooled
- 1 small cucumber
- 1-2 green onions, chopped small
- 2 cloves minced fresh garlic
- 1 tsp extra virgin olive oil
- 1 tbsp lemon juice bottled or fresh squeezed
- 1/4 tsp each salt and pepper
- 1-2 tbsp each fresh parsley, mint, and basil alt: use 1/2-1 tsp dried herbs
- 1 small tomato, chopped
