Copperhead Bites

Course Side Dish

Ingredients
  

  • 1 lb sausage we used pork
  • 8 oz cream cheese 1/3% less fat
  • 12-15 fresh jalapenos
  • shredded cheese

Instructions
 

  • Slice the peppers in two. Remove the seeds and scrape the pepper clean.
  • Set aside on a baking sheet.
  • Brown the sausage in a skillet.
  • When sausage is cooked, remove to a bowl and add the cream cheese. Stir well.
  • Stuff one pepper at a time with the cream cheese/sausage mixture.
  • When they are all stuffed, top with desired amount of cheese.
  • Grill for 15-20 minutes, or until the cheese is browned and bubbling.
